If you had to pick a fruit to be the spokesperson of Summer, it would probably be the peach. Not only are they perfectly in-season, but they are great in so many summer dishes such as fruit salads, salsas, and cobblers.
Peaches are such a classy looking fruit, so I wanted to make a dish that showcased them in entirety, rather than cutting them up. So I played around with a few sweet and savory rubs and fell in love with this recipe. It is so simple, including the semi-homemade ice cream flavor. These grilled peaches are the perfect finish to a lazy Sunday dinner on the porch.
For Ice Cream
1 Pint Vanilla Bean Ice cream
1 TBLS Ground Nutmeg
2 TBLS Brown Sugar
Scoop ice cream into microwave safe bowl. Soften for 10 seconds at a time until you can stir it with a spoon, but ensure it is not melted. Add brown sugar and nutmeg and stir to combine. Cover and refreeze until hard enough to scoop.
2-3 large peaches, ripe but not too soft
2 TBLS butter, melted.
1/4 sugar, preferably Demerara sugar
1 TSP Coriander
1 TSP Cumin
1 TSP Cinnamon
Fresh mint leaves for garnish
Preheat your grill or BBQ to medium high heat. Cut peaches in half and carefully remove pit. Combine all remaining ingredients in small mixing bowl. Dredge each peach half in mixture, using your hands to completely coat each one.
Grill peaches face down until grill marks are present, about 5 minutes. Flip and lightly grill the skin side, about 2 minutes. Serve warm with a scoop of the Nutmeg Ice Cream and garnish with chopped mint leaves.
Pair with sparkling cider or a fruity champagne.
