The Recipes: Crab and Grapefruit Salad

Lemon Champagne Vinaigrette

In a blender or Cuisinart combine the following:
  • 2 cloves garlic
  • 1/4 cup red onion
  • 1 tsp Dijon mustard
  • 1tbls honey
  • 1/4 cup champagne Vinegar
  • 2 Tbls Lemon juice
  • 1/4 cup olive oil
  • Sat and Pepper to taste

Crab Grapefruit Salad

  • Baby Spring Greens
  • 1/2 Lb king crab legs, then shelled
  • 1/4 cup crumbled Bleu Cheese
  • 2 tbls toasted almonds, chopped
  • 1/2 pink grapefruit segment

Toss greens with vinaigrette and add crab, cheese, almonds and grapefruit on top. Serve immediately. finish with fresh cracked pepper.

  5. I made this salad over the weekend. Believe it or not, the price of crab is quite a bit higher than lobster in Wisconsin. So, I substituted lobster. It was an elegant treat, and I will make it again. Thanks!
